Adriatic Prawns

 

Believe it or not, I first tasted this dish in the Hotel Kempinski in Moscow. I've adjusted it slightly to my taste. Blending king prawns, cream, basil and mozarella, it can be served as a starter or main course. As a starter, use half portions, as it quite filling.

 Ingredients (serves 3-4)

  • 500 gm king prawns (cooked)
  • 100ml fresh cream
  • 1 medium onion coarsely chopped
  • 1/2 green pepper coarsely chopped
  • 2 crushed cloves garlic
  • Two generous handfuls of fresh basil leaves
  • 2 balls of mozarella, thinly sliced
  • 100 ml white wine
  • salt and pepper
  • 1 tbsp olive oil

Method

Fry the onion lightly in oil until soft. Add the green pepper and garlic, continue cooking gently for 2 minutes. Add the prawns and wine, heat gently for 2-3 minutes stirring continuously. Blend in the cream, heating gently and stirring for another 2-3 minutes or until the sauce has reduced to a suitable consistency. Season to taste and then lay in a shallow baking tray.

Cover completely with basil leaves and then cover with the mozarella slices. Grill under a hot grill until the mozarella is browning.

Serve and savour....and how about some focaccia bread with it - the sauce is heavenly and not to be wasted!

I can taste a crisp fresh frascati with it....
