Mediterranean Recipe is Aljotta - Maltese Fish Soup

Malta is itself a cooking pot of cultures and languages, situated
between Libya and Sicily.
It has been influenced over the centuries by the Moors, the
Crusaders, and numerous other temporary visitors.

Serves 3-4
Ingredients
- 1 lb white fish
- 2 onions,
chopped
- 8-12 garlic
cloves, minced depending on
size
- 1/2 kg (1
lb) tomatoes, peeled & sliced
- 1 tsp tomato
pureé
- 1 tsp olive
oil
- pinch of
marjoram & dry mint
- 5
peppercorns
- 1/2 cup
cooked rice (optional)
- 4 cups fish
stock

Method Fry the chopped
onion in the olive oil until soft then add the garlic, herbs, tomato paste. Cook for a few minutes then add the
tomatoes and fish stock. Bring to boil. Add the fish, bring to boil again and simmer for about 10 minutes. Before
serving add cooked rice if desired.
The recipe is easily adjusted for more servings with more stock, and as an
alternative to rice some potatoes could be added, though take care not to overvook the fish whilst waiting for the
potatoes.
